Baked fennel with dill and lemon

Serve this surprising dish! Fennel, with its slightly aniseed flavour and crunchy texture, gets a delicious sweetness when baked that goes perfectly with the fresh accents of lemon and the spicy, fresh touch of dill. This combination creates a surprising flavour profile that is both refined and refreshing.

Shopping list

  • 2 large fennel bulbs, sliced
  • 2 tablespoons olive oil
  • 1 lemon, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste
  • Balsamic dressing
  • 50g Parmesan cheese, grated (optional)

Bereidingswijze:

  1. Prepare the fennel:
    Preheat the oven to 200°C. Cut the fennel bulbs into thin slices and place them in an ovenproof dish.
    Drizzle the fennel with olive oil and add the minced garlic. Mix well so that the fennel is evenly coated.
  2. Baking:
    Place the thin lemon slices between the fennel slices for extra flavor.
    Season with salt and pepper. Bake the fennel in the oven for about 25-30 minutes until soft and lightly caramelized.
  3. Finishing:
    Remove the fennel from the oven and sprinkle with freshly chopped dill.
    If desired, sprinkle the grated Parmesan cheese over the fennel and place under the grill for a few more minutes until the cheese is melted and lightly browned.
    Top with the balsamic dressing.
  4. Serve:
    Serve the fried fennel directly as a side dish with fish, chicken or a vegetarian main course.
    Garnish with extra dill and a few extra drops of lemon juice for a fresh touch.
