Blanched rucola
Preparation
Heat up the crème fraîche in a saucepan on a low fire, don't let it get too hot.
Cut the ham into small pieces and add to the saucepan.
Add the honey mustard and stir well.
Slice the tomatoes in four and add them.
Add the rucola and take the pan off the fire; the rucola should stay crunchy.
This makes a wonderful pasta sauce.
Rucola with Parma ham
Preparation
Cut the ham into small pieces; not too small though.
Crumble the ricotta.
Whisk up a dressing of the olive oil, lemon juice, basil, sugar, pepper and salt.
Stir in the rucola and the ham to combine, and sprinkle it with ricotta.
Easy to make, ready in a minute, and delicious on a roll or as a lunch or dinner salad.
